- 2 eggs
- fresh chopped thyme
- a pinch of salt and pepper
- 1 tbsp olive oil
In a bowl add the eggs, salt, pepper and beat with a fork.
Heat the olive oil in a non-stick pan over high heat for about 30 '' in high temperature.
Once the oil starts to leave the center of the pan, add the eggs and lower the heat.
Do not turn the omelette. Use a spoon to roll the edge inwards and cover the gap with the uncooked eggs.
When the omelette is ready, turn off the heat and add the thyme.
Don't overcook, we want to be juicy in the center.
You can serve it with a salad of your choice. Enjoy!
