Ikarian soufiko

Ingredients

  • 2 aubergines
  • 2 courgettes
  • 2 green peppers
  • 2 cloves of garlic
  • 2 red onions
  • 150 g green beans
  • 1 large tomato
  • 150 ml red wine
  • 60 ml olive oil
  • salt / pepper

Instructions

Step 1
Pour 1 tablespoon of the olive oil in the bottom of a large pot.
Step 2
Cut all the vegetables into medium-sized pieces and add them into the pot. Heat for 5 minutes and season with salt.
Step 3
Add the wine and grind in some pepper, and then reduce the heat and simmer for about 30 to 35 minutes until sweet and tender.
Step 4
Serve with a teaspoon of olive oil.
