Potato salad

Ready in: 30 minutes  4 portions


  • 6 potatoes
  • 200 grams of carrots
  • 1 red onion
  • 2-3 fresh onions
  • 3 tbsp of parley chopped
  • 1 tbsp of dill
  • 100 grams low fat cream cheese
  • lemon juice
  • 2 tbsp vinegar
  • 1/2 cup (100 ml) olive oil
  • a pinch of salt and pepper


Step 1
Cut the carrots into small pieces
Step 2
Wash the potatoes. Boil them with their skin. After they cool a bit but while they are still hot, peel them and break them into chunks in a bowl with a fork. Be careful not to melt the potatoes. We have to keep them in pieces
Step 3
Drizzle with olive oil, vinegar and lemon juice.
Step 4
Then, add all the other ingredients. Carrot, onion, herbs, cream cheese, etc. Mix and taste if you want add a little more lemon, vinegar or salt.
Step 5
Keep the potato salad in the fridge until served, put it on a plate and garnish with a little grated carrot.
