Sweet potato and black bean salad

Ready in: 30 minutes  1 portion


  • 150 grams sweet potatoes
  • 50 grams cherry tomatoes
  • 115 grams black beans boiled
  • 1 tbsp olive oil
  • 20 grams onion
  • 1 tbsp lemon juice
  • 100 grams cottage cheese


Step 1
Set the oven at 190 ° C.
Step 2
Peel and cut the potato into wedges, add salt and optional spices over the potatoes and tomatoes and roast on a baking sheet for 20-30 minutes.
Step 3
Rinse the beans with water and cut the onion into thin slices.
Step 4
Put the sweet potatoes and tomatoes onto your plate. Add the beans and onions and mix well.
Step 5
Drizzle with oil and lemon juice and place the cottage on top.
Step 6
Add extra herbs if you want to enhance the taste.
Step 7
You can prepare it and take it with you next day, it is equally delicious served cold!
