Turmeric vegetable soup

Ready in: 35 minutes  3 portions


  • 2 carrots
  • 1 small potato
  • 1 small sweet potato
  • 1 red onion
  • 3 tbsp olive oil
  • 1 tbsp turmeric
  • 5-6 chives, chopped
  • 2 tbsp olive oil
  • 1 leek
  • a pinch of salt and pepper


Step 1
Place a pot over medium to high heat. Add 1 tbsp olive oil.
Step 2
Cut all the vegetables into smaller pieces and add them to the pot.
Step 3
Cook about 10 minutes stirring regularly.
Step 4
Add 2 tbsp vinegar and then cover the vegetables with water.
Step 5
Cook about 15 minutes or until they become soft.
Step 6
Turn off the heat and after the boiling stops, process them with a hand blender directly in the pot or in a table blender, returning them to the pot.
Step 7
Add hot water (about 3 cups) until you reach the desired density.
Step 8
Add the turmeric, 1,5 tbsp olive oil, 2 tbsp vinegar, salt and pepper.
Step 9
Serve and sprinkle with the chives. Enjoy!
