Vegan omelette

Ready in: 15 minutes  1 portion


  • 45 grams chickpea flour
  • 3/4 cup plant based milk  
  • a pinch of salt and pepper, paprika, oregano
  • 1 tbsp olive oil
  • 1 potato
  • 1 onion
  • 1 pepper
  • 4 pleurotus mushrooms
  • 10 grams (2 tsp) nutritional yeast 


Step 1
Finely chop the vegetables.
Step 2
Heat 1 tbsp olive oil in a pan and saute the potato, onion, mushrooms and pepper.
Step 3
Mix chickpea flour, nutritional yeast, spices and milk in a bowl or jar and stir until there are no lumps.
Step 4
When the vegetables are ready, add the chickpea porridge and let the omelette cook.
Step 5
Once the omelette is ready on one side, turn it over to cook on the other side.
