Wild greens with cheese

 Ready in: 25 minutes  2 portions


  • 1 large bunch of wild greens (various types if you can find them)
  • 1 or 2 lemons
  • 5 tablespoons olive oil
  • salt
  • 100g Feta to serve (optional)


Step 1
Fill a big saucepan halfway with water and place on stovetop to bring to the boil.
Step 2
In the meantime, cut off any bruised leaves or stems from your greens. Wash well to get rid of any soil.
Step 3
Submerge your greens in the boiling water and cover until it starts to boil again.
Step 4
Uncover your saucepan, lower heat and stir around.
Step 5
Boil for about 5 mins or until the stems are tender. Do not over boil.
Step 6
Strain and place in serving dish.
Step 7
Add your lemon juice, olive oil and salt on top as your dressing. Serve with some Feta on top.
