- 2 big potatoes
- 3 cups / 300 g Brussels sprouts
- 2 apples
- 2 red onions
- 2 cups / 80 g shredded kale
- 2 tbsp olive oil
- 1 bunch of fresh thyme
- 1 tsp salt
- 1/2 tsp chili flakes
- Preheat oven to 400°F / 200°C.
- Line a baking sheet with parchment paper.
- Cut the potatoes, apples and onions into wedges. Cut the Brussels sprouts in half.
- Season with oil, thyme, salt and chili flakes.
- Roast in the oven for 25 minutes.
- Add the kale and it´s ready to serve.
