Tofu and broccoli salad

Ready in: 20 minutes  1 portion


  • 50 grams of rice noodles
  • 150 grams of tofu
  • 200 grams of broccoli
  • 1 tbsp olive oil
  • 30 grams of spinach
  • optional: lime, cilantro, garlic, ginger, red chili pepper 


Step 1
Boil the noodles according to the packaging instructions.
Step 2
Cut tofu into smaller pieces. Add oil into a frying pan and fry the tofu and broccoli, adding soy sauce and optional seasoning (garlic, lime, ginger, and chili)
Step 3
Serve with the noodles and baby spinach.
Step 4
Give it some extra flavor with cilantro and lime!
Step 5
Don’t be afraid to make extra for another day! Eat it cold or warm – it’s so good, it works either way!
